Alexis Soyer is known as the great cook of the Reform Club and author of a number of cookery books who single-handedly transformed Army catering which in the mid-nineteenth century was truly horrific. Alexis Soyer is known as the great cook of the Reform Club and author of a number of cookery books who single-handedly transformed Army catering which in the mid-nineteenth century was truly horrific. This is the first reprint of Soyer's extremely rare book, first published inabout his time in the Crimean War.

Soyer, a Frenchman by birth who worked his entire life in the UK, went to the. Another, less known, was Alexis Soyer, chef at the Reform Club, inventor, a generous eccentric with a social conscience and a flair for self-publicity, who travelled to the Crimea on a mission to improve the diet of the soldiers, chronicled in his narrative ‘Soyer’s Culinary Campaign’ (published ).

Like Florence, Soyer caught ‘Crimean fever’ but remained in the Crimea until the end of the war. He was ill when he returned home and wrote his final book ‘Culinary Campaign’ in He died of fever on 5th August and was buried in Kensal Green cemetery.

The famed cook Alexis Soyer () wrote Soyer's Culinary Campaign () about his experiences to improve the cooking and baking for the British Soldiers during the Crimean War (). Floating bakeries on ships were described at length; from "working of the flour" to 15+ thousand rations baked each day.
